I am always in search of awesome desserts. What can I say? I’m addicted to sugar! Let’s face it, who isn’t really? Buuut, since I have started learning about being healthy and our bodies, I have learned that refined sugar really is absolutely TERRIBLE for your body. When you eat sugar, your immune system goes into “sleep mode” sort of. While you are processing the sugar you are eating, you are defenseless against fighting infections and viruses that you might be encountering. When I first learned this I was skeptical of course, but I now know that it really is true. Even just making sure that when I or my son is sick I cut out sugar completely, I saw the difference. Now I am working hard to completely cut it out of my diet. Don’t worry though! You can still enjoy a delicious treat that does not have refined sugar! Raw honey is the only TRUE unrefined sugar, although maple syrup is also a good source of unrefined, natural sugar. Raw honey is taken straight from the source with nothing done to it; no heating, no nothing. The reason why honey is better for your body is because your immune system is not compromised when you eat it. It does not raise your blood sugar in the same way or as much as refined sugar does. I will say that the taste does take some getting used to; but seriously, soon you will not want to eat refined sugar. And you don’t have to put as much honey to make it taste sweet as you would using refined sugar. Now that I have mostly cut out refined sugar, whenever I do eat it I often think that the dessert is TOO sweet! REALLY! With all that being said, all of my recipes I create will be without refined sugar! I hope that you can start to love unrefined sugar treats as much as I do! :)
Ok, sorry for the delay in the recipe. I don’t want to not share with you things that I have learned in my journey of getting healthy. :) So, I did start with this recipe from eatliverun.com, but I did change pretty much everything to make it gluten free. So I would really say that I did write this recipe. :)
Chocolate Cookie – for outer part of ice cream sandwich
2 1/2 cups almond flour
1/2 cup cocoa
1 1/4 tsp baking powder
1/4 tsp salt
1/2 cup honey
1/4-1/3 cup melted butter (the more you add the less sticky the batter will be and easier to work with)
Mint Chocolate Chip ice cream (I used this recipe. I just changed the amount of mint extract to 3/4 tsp because I thought 2 tsp was too minty for my taste. If you LOVE minty then follow the recipe exactly)
Preheat oven to 375′
Melt butter and then add honey, mix together. Put in the egg and stir to combine. Add in the rest of the dry ingredients, adding the flour in batches and mixing in between to make sure that it is mixed very well. Once all your flour is in, the consistency should look like the consistency of a firm brownie recipe.
Line baking sheet with parchment paper. (This is necessary to help the cookies not stick. Plus it makes clean up way faster!) Using a small biscuit cutter as my shape outline, I placed it on the cookie sheet and then spooned in about 1 TBL of the batter into the center of the cutter. Using a spoon, spread the batter to fill the cookie cutter and then gently pull it away. Now, I will say that this part does take a while. Depending on how much butter you added, the batter does stick to the cookie cutter. And I did find that it was easier to get a clean lift if the cutter was clean before you filled it again. You can try to see if you find any easier way if you like ;).
Once your tray is filled, cook the cookies 10 mins. Allow to cool on the sheet. Once cooled you can prick them with a fork to get the look of store bought ice cream sandwich cookie if you like. Also, once they are completely cooled you can add your ice cream of choice. If you are using homemade ice cream then make sure to fill your cookies right after the ice creamis made. It does not work well to let it freeze up in the freezer over night because homemade ice cream gets extra hard and icy and hard to use to fill the sandwiches (although it does still taste good! :)) Freeze the sandwiches for at least 2 hours or over night for a harder consistency. ENJOY! Try not to freeze your teeth off!
